Not only is cabbage packed with nutrients in every delicious bite, it’s a very versatile veggie. Traditionally we may think of it as sauerkraut or Cole slaw, but there are many more ways to enjoy cabbage. Try it cut up with a drizzle of lemon and a bit of salt for a snack, add it to a sandwich or wrap at lunch time, and at dinnertime whip up a stir fry using cabbage as your base.
One of my favorite cabbage recipes is a new twist on an old favorite.
Granny Smith Apples, apple cider vinegar, and just a touch of lemon makes for tangy and refreshing side for any meal. Start by placing the shredded cabbage, carrots and sliced apple in a bowl.
Next, grab a large glass measuring cup and whisk together the mayo, oil, vinegar, lemon juice, and poppy seeds. Add in some salt and pepper to taste.
The last step is to pour the mixture from the measuring cup on top of the cabbage mixture and stir it up.
The coleslaw tastes best when chilled for at least an hour before eating.
