Create A Salad

Let’s Create! // Greek Veggie Salad

It’s hot outside!  When it’s hot out it can be hard to find the motivation to fire up your oven and cook a hot meal.  To keep it cool in the kitchen try this Greek Veggie Salad.  It’s fresh and tangy and can be served in many was as part of a MyPlate meal.

First, gather your ingredients: DSC_8000

  • 5 Tbsp olive oil
  • 2 Tbsp fresh lemon juice
  • 1 clove garlic, minced
  • 1 Tbsp red wine vinegar
  • 1/2 tsp dried oregano
  • 1 Tbsp dried dill
  • 2-3 medium tomatoes
  • 1 medium red onion
  • 2 medium zucchini
  • 1 medium cucumber
  • 4 oz. feta cheese

Next, chop up your veggies and place them in a medium bowl.  DSC_8003

Now it’s time to make the dressing.  In a small bowl whisk the remaining ingredients together.  DSC_8006

Once the dressing is mixed, pour it on top of the veggies and mix well.  DSC_8026

When you are ready to serve, crumble feta cheese on top.  And that’s it!  DSC_8014

Serve it with crackers and cheese, rolled up in a whole wheat tortilla, or mixed with rice or pasta.  If you’re looking to add a bit of protein to your meal, serve it on top of grilled chicken.  Enjoy!
