Did you see my post earlier this month all about summer squash? I posted many of my favorite summer squash and zucchini recipes. You can check it out here. Most of my favorite recipes use cooked zucchini. I made it my mission this month to find a recipe using raw zucchini to add to my list of favorites. Fresh Zucchini Salad is light, easy, and only has seven ingredients!
To make Fresh Zucchini Salad, you need to gather these ingredients:
- 3-4 small zucchini or summer squash
- 2 teaspoon olive oil
- 1/2 lemon
- Salt and pepper to taste
- 1 oz. Parmesan cheese
- 2-3 Tbsp. slivered almonds
The first step is to wash your summer squash by simply running it under cool water from your kitchen sink. Next, take a vegetable peeler and start shaving long ribbons or strips of zucchini into a medium sized bowl. You can stop shaving when you get to the seeds at the core of the zucchini.
Drizzle 1 teaspoon of olive oil over top the ribbons and toss lightly. The last step is to top the ribbons with fresh lemon juice, slivered almonds, and salt and pepper to taste.
And that’s it. A light and fresh salad using raw zucchini. Enjoy!
