I think it is safe to say that tacos are high on my list of favorite foods. Today was my first time trying Huevos Rancheros Tacos. I can now add them to my list of favorite tacos! With whole grain, healthy protein, healthy fat, and veggies they are an easy to make, nutritious, and tasty meal.
To make Huevos Rancheros Tacos, start by gathering your ingredients.You’ll need:
- 4 (6-inch) corn tortillas
- Nonstick cooking spray
- 1/2 cup shredded cheese
- 1/2 cup black beans, drained and rinsed
- 1 tsp. olive oil
- 4 large eggs
- 1/4 tsp. black pepper
- 1/4 cup fresh salsa
- 2 Tbsp. sour cream
- 1/2 avocado, peeled and chopped
- 1/4 cup cilantro, chopped
- Lime Wedges
The first step is to preheat the broiler in your oven to high. While it is heating up, prepare a baking sheet by spraying it with nonstick spray. Place the tortillas evenly spaced on the baking sheet. Once the broiler is ready, place the baking sheet in the oven and broil for 2 minutes.
Remove the pan from the oven and top each tortilla with cheese and beans. Now, place the baking sheet back in the oven and broil for 2-3 minutes until the cheese is melted and the tortilla is starting to crisp.
In the meantime, heat a nonstick skillet on the stove. Place the oil in the pan and swirl to coat. Crack the eggs into the pan. You can cook all the eggs at once in a large skillet, or do them one at a time in a small skillet like I did. Cook the eggs about 4 minutes until the whites are set.
The last step is to assemble your tacos. Place one egg on each tortilla.
Then top with salsa, avocado, cilantro, and sour cream. Serve with lime wedges for squeezing.

I want to try this although at my house we’d likely have to scramble the eggs. My problem is that when I try to print the recipe card it cuts off the right side of it. Could you please possibly post one that would print sideways on the paper? Thanks.
