Leftoverpallooza // Mashed Potato Turkey Bites and More!

Turkey, mashed potatoes, stuffing, oh my! Thanksgiving dinner often leaves lots of leftovers. In fact, I cook a little extra just so I can enjoy the leftovers! After a day or two, the novelty has usually worn off and I’m ready for something new. To prevent food waste, it’s a good idea to have some recipes on hand that will help you use up those leftovers in appetizing ways.  Below are three of my favorite Thanksgiving leftover recipes.

Turkey Orzo Soup puts a simple spin on the more traditional recipe for Turkey Noodle Soup.  It’s easy to make and packed with veggies.  If you don’t have orzo on hand, any type of pasta or rice will do.  

Turkey Nachos make a great snack and are a more healthy alliterative to other nacho recipes.  Next time I make them, I think I’ll add some black beans for an extra pouch of protein.  You can make them as spicy or as mild as you would like, adding more or less jalapeños, taco seasoning, and hot sauce.  Find our recipe for homemade taco seasoning by clicking here.

You can’t go wrong with Mashed Potato Turkey Bites!  This recipe puts your leftover turkey and mashed potatoes to good use.  You might also try adding leftover stuffing to the mix and serving with gravy or cranberry sauce.
