Does your day always go as planned? Does dinner always work out the way you envisioned it. If you are shaking your head “no”, you are not alone. It is important to learn some coping strategies – even in the kitchen! When my day has been a bit on the crazy side, and I fear dinner won’t be on the table, I pull out my bag of brown rice. It is a staple in my kitchen. Brown rice is a versatile grain that can be used in casseroles, soups, skillet meals, stir fry dishes, and as a filling for wraps. Top brown rice with grilled chicken, beef, or fish, stir fried veggies, and your favorite seasoning and you have dinner on the table.
Brown rice is a whole grain. MyPlate teaches that the average American needs about 6 ounces of grains every day, with half of them being whole grains. Most Americans don’t eat enough whole grains. Adding brown rice to your weekly menu plan will help you reach the recommended amount, provide your body with vitamins and minerals, and bulk up your meals.
The USDA (United States Department of Agriculture) invites to to try brown rice five ways. Find links to the recipes below, plus links to some of my favorite rice recipes.
I decided to give Fiesta Rice Salad a try.
It’s hard to believe a salad with such a simple recipe could be so good! The cilantro, red wine vinegar, and red onions add all the flavor that you need. How will you let brown rice save the day this week? Come on back and let me know what worked for you. Enjoy!
