Cabbage is commonly associated with St. Patrick’s day, a celebration of Irish culture. Traditionally, St. Patrick’s Day was a religious feast for Irish American’s. They used cabbage as part of their feast because it was the most affordable vegetable. There are hundreds of varieties; Green, Red, Napa, Savoy, and Bok Choy are the most known types. Green cabbage is used in coleslaw and looks similar to a head of iceberg lettuce. Red cabbage is not quite as tender as green cabbage, and is used for it’s beautiful color. Napa and Bok Choy are also known as Chinese cabbage, and often used in Asian inspired dishes.

Cabbage is mild in flavor which makes it easy to add to many types of recipes. It blends well with many types of seasonings and spices. Add it as a layer in warm dishes like casseroles and lasagna, use it to extend soups, stews, and sauces, or cook it tender crisp in a stir fry or skillet dish. Used raw it makes a great, crunchy addition to salads, sandwiches, wraps, and tacos.
