Wild and free summer days have faded. Playful summer nights have been replaced with busy after school nights. Homework, family obligations, and other activities can leave you feeling like you are in a whirlwind.
One of my favorite ways to get dinner on the table amid the chaos is to whip up a One Pot Wonder! One pot meals make for less mess, which is always a great thing at dinnertime. The idea is that you grab one pot, skillet, pan, etc., throw all the ingredients in, and with a little time, you have a meal.

I found myself unprepared this week. I didn’t have anything planned for dinner, so I scoured the pantry and fridge to see what I could come up with. With some potatoes, broccoli, ham, and a few other ingredients I had on hand, I made Cheesy Broccoli and Potato Skillet.
The recipe was delicious, and it all fit in one skillet! That made for a quick and easy dinner clean up, just in time for homework. Enjoy!
