Given the season, I decided to try a soup in a pumpkin recipe. At first, I was a little intimidated to try something new. I was pleasantly surprised how easy it was. Once the top was cut off to make the lid, and the seeds were removed, it was as simple as adding the ingredients.
Pumpkin Sausage Soup is a fun and festive recipe, perfect for this time of year, an oh so delicious! If you don’t have Italian sausage on hand, try ground beef or chicken. You could even throw in leftover Thanksgiving turkey. If you don’t want to cook the soup in a pumpkin, it still makes a great recipe. Instead of adding the ingredients to the pumpkin, put them in a slow cooker. Reserve the half and half and the cheese and add it to the slow cooker during the last 30 minutes of cooking time.
