My two favorite tips are to stock up on veggies and discover fast ways to cook them. Having vegetables available makes getting them on the table quick. This helps lessen the burden we sometimes feel during meal preparation. Another favorite tip of mine is to get ahead of the game. If you prep your veggies ahead of time, or cook a large batch to save for later, it becomes easier to add veggies at every meal. My son was home from school today and was in need of an activity. So I pulled him in the kitchen to help me test out a new recipe. I was pleasantly surprised at how much fun he was having, and how good he was at basic food preparation skills. We whipped up a batch of Garlic Chicken with Cauliflower Rice. We started by combining Parmesan cheese, paprika, Italian seasoning, and some minced garlic in a bowl.
He thought it was a stinky job, but somebody had to do it!
While the chicken was cooking, we whipped up a batch of cauliflower rice.
To make cauliflower rice, you can use a blender, food processor, or finely chop the cauliflower with a knife.
Once the chicken is cooked, we removed it from the pan and set it aside. We melted some butter in our skillet and cooked the onions and garlic. Next, we added the cauliflower rice, chicken broth, lemon zest, and parsley.
Our last step was to add the chicken back to the pan to reheat. We topped the chicken with more lemon zest, parsley, and a bit of black pepper and parsley flakes.
