I tried something new this week. This recipe has three of my favorite foods, eggs, potatoes, and bacon.If you don’t have bacon you can use ham. You could also cook and crumble sausage and sprinkle it on the potatoes. Next time I make them I’m going to add a layer of spinach. The recipe tells you to reserve the potato flesh for later use.
