What you might think is a small odd looking green tomato is actually a tomatillo. Don’t be afraid to add a few to your shopping cart. Tomatillos have a sweet, but tangy flavor and can be used the same way you use a tomato. When picking out tomatillos at your local farmers market or grocery store, look for those that are dry, hard, and free of mold. They should also have tightly fitting husks. With tomatillos on hand, try out one of the Top Ten Ways to Enjoy Tomatillos from fruitsandveggies.org.
My new favorite tomatillo recipe is Tomatillo Chicken.
Tomatillo chicken is great served on top of brown rice or with a side of veggies. I made a little extra chicken to cut up for tomorrow on top of a salad, or wrap up in a burrito. Below are a few more recipes to try. Enjoy!
